Ensure them to remove all of your access, and make sure that they're able to testify to the authenticity of the video in court should it be required. If you're still concerned about this, I would recommend bringing in an outside contractor to manage the video capture. Simply keeping detailed records with video and a simple on screen timestamp may be enough. Second, will the court even care if they did? I think in most cases, the standard for evidence is much lower than what you're expecting. First, will the accused even be smart enough to challenge your evidence with a plausible scenario as to how it would have been tampered with? Probably not. I don't have details on this specific case, but it may be possible that you're just over thinking it. Pretty much everything we're going to be able to come up with can be spoofed or tampered with. It's not possible to do what you're asking with 100% certainty.
